Throwback Thursday, Pear, Bacon & Bleu Flatbread

This flatbread is topped with one of my favorite combos,

bacon, bleu cheese & fresh pears

Sweet, salty, cheesey!

The flatbread also gets a big flavor boost from caramelized onions

and roasted garlic

The first step is to form the crust by stretching the pizza dough

into a rectangle on a sheet pan,

drizzle it with olive oil and sprinkle it with salt and pepper

Bake it for 10 minutes until it starts to brown

Squeeze roasted garlic onto the crust

and spread it around into an even layer

and then top the crust with the caramelized onions

Tear the bacon into small pieces or use scissors to cut it up

This flatbread also has Parmesan & Mozzerella cheeses

along with the bleu cheese

Sprinkle the cheeses all over the onions

and then add the bacon pieces

Top with the pear slices

Bake for 10-15 minutes until golden and melted

Ingredients

  • 1 ripe pear cut into thin slices, no need to peel
  • 1 large Vidalia or sweet onion caramelized
  • 1 head garlic roasted
  • olive oil
  • salt & pepper
  • pizza crust dough
  • grated Parmesan mozzarella
  • grated Mozzarella
  • Bleu cheese, crumbled
  • 6-8 slices thick cut bacon, cooked

Instructions

  • Stretch dough into a crust. drizzle with olive oil and sprinkle with kosher salt and pepper.
  • Bake crust 10 minutes until just starting to brown and remove from oven
  • Spread garlic [just hold the head and squeeze and the soft garlic will slide out and toss away the papery shell] evenly over the crust.
  • Then top with the onions making an even layer
  • Top with cheeses, crumbled bacon and sliced pear
  • Finish with another sprinkle of Parmesan. This can hold in the fridge until you are ready to bake it.*
  • Bake at 400 degrees for about 10-12 more minutes until golden and melted

Notes

* If you aren’t going to bake this immediately you might want to slice the pears and add them later when you’re ready to cook it, to keep them from discoloring
